I'm very fond of the helicopter shot that opens "Working Girl" accompanied by Carly Simon singing Let the River Run.

The Lord of the Rings: The Fellowship of the Ring - great opening narration

The Sum of All Fears - by no means a great movie, but the opening scene is a masterpiece IMHO

I agree with the following from above and would add (in no particular order)…

1. Amélie (and Royal Tenenbaums, which plays with the similar storybook style).
2. Touch of Evil (restoration version)
3. Player (with it’s Touch of Evil nods)
4. Sunset Blvd.
5. Princess Bride (Peter Falk)
6. The Incredibles
7. Star Wars (as noted, and Empire for how it plays off the original’s expectations)
8. Spider-Man 2 (and the original Superman II, both for catching viewers up without slowing things down)
9. Star Trek III (the replay of Spock’s death)
10. The Sting
11. Blade Runner
12. Back to the Future
13. Citizen Kane (“No Trespassing” – News on the March)
14. All the President’s Men
15. The Graduate
16. The Hustler

Actually, the jump-out-of-the-plane-without-a-parachute opening of The Spy Who Loved Me knocked me out. Of course this was with the lowered expectations prompted by old Roger as 007. Unfortunately the stunt was pretty much repeated and repeated in subsequent Bonds so that it probably looks less impressive today.

All good choices! The one that really sticks with me is Grand Prix (1966).

As an F1 racer is being warmed up, the camera lens backs out of the exhaust pipe. The sound is more than impressive!
