Well, it's been a while since you asked and therefore maybe you already updated... However...

I exchanged my 40GB (really, what were they thinking ; well, it's all those games doing large installs) with a 320GB hard drive (I wasn't sure I need 500GB; the decision was then taken away from me, as the 500 is simply not available around here...). I followed the instructions at The SixthAxis which I found to be very humorous and detailed. Everything went smoorth that way.

When one is done, don't be shocked that your trophies are "gone" and can apparently not be synced. You'll have to start each trophy game once to create the local trohy file, then sync that with the online...

Don't expect too much, the longest time is actually the part where the backup and later restore procedures are running If you got your tools ready the HD exchange itself takes less than 20min.
