Yuen Woo//Ping=61/90 Yuen//Woo Ping=61/90 Yuen/Woo/Ping=61/90
Woo-ping//Yuen=74/149 Yuen Wo//Ping=24/44 Yuen//Wo Ping=24/44
I would be interested to know your opinions on how he should best be entered... |

...are all seen as the exact same credit. What I mean is, they are all a credit of 'Yuen Woo Ping', just parsed differently.
The same goes for... Yuen Wo//Ping=24/44 Yuen//Wo Ping=24/44
That means we really only have 3 credits for this person: Woo-ping Yuen=74/149 Yuen Woo Ping=61/90 Yuen Wo Ping=24/44

The parsing differences of Yuen Woo Ping 61/90 and Yuen Wo Ping 24/44 are 2 variants credited to the same sets films, the CLT does not care about parsing.
Since you didn't provide any information on the actual credit, it's hard to give any other opinion. If these are all credits that have been romanized from an Asian Language credits, it becomes even more difficult.
If the screen credit is Yuen Woo Ping, then I'd parse it 1/2/3. Some people will try to determine the family name/given name of Asian names and enter them into profiler First Name: given name Last Name: family name. That method results in name variants that might not exist if all of them are actually listed in the credits as Family/Given and people follow that order (the correct method).
There is a sticky at the top (post 3) of the contribution discussion forum about romanizing Asian names, and you can see the various opinions on this topic there.

Pretty sure that the family name is 'Woo Ping' as this is sometimes hyphenated as 'Woo-Ping' so that's not going to be a problem.
The question is - Do I go ahead and make the changes to 'Woo-ping Yuen' even though he's going to be known as 'Yuen Woo Ping' on every film he makes from now on? |

It doesn't matter how he is known, it only matters how he is most often credited. This is one of the major flaws in the CLT...the common name may change over time. Still, we have to abide by the current results unless they can be proven wrong. So, assuming the credits are correct, ''Woo-ping Yuen' would be the common name. Unicus is correct and this will always be true, there are some users who simply go ballistic at the idea of JUST reading what is On Screen WITHOUT any kind of translation. Yet another case of wanting to have the "correct" name instead of the credited name.
