It appears that there are several variations of the titles for the individual volumes as well as sorting issues.

I see that the "Star Trek: The Original Series" part is consistent but after that I see variations like "Vol. 2", "Volume 6", " - Volume 7", ": Vol. 4", ": Volume 19".

The title to sort by also appears to be inconsistent for example When I sort by title I see 29, then 3, then 33, then 10, then 01, then 4.

Please correct me if I'm wrong but shouldn't they all be in a format like this ?
"Star Trek: The Original Series: Volume 1"

And shouldn't the sort title read?
"Star Trek: The Original Series: Volume 01"

Title should be as it is on the cover.
Sorttitle is private only and is initially the same as the title as it was, when you downloaded the profile (except leading articles are normally removed).

Some manufacturers are inconsistent with the titles on their covers; it looks bloody awful when different volumes are listed together. Sometimes the spine doesn't match the front of the cover of the main menu of the DVD.

Yes, but to have a common ground to work with, "take it from the (front) cover" works best. Otherwise who decides which of the variants is the correct one?
Locally everybody can do, what they want.

Just to be perfectly clear, for this series, the volume numbers are not on the front cover, they are on the spine, so in this case it is a combination of the front cover and the spine.  Colons should be used between title, season and volume.

So I'm correct in stating this?

Display title
"Star Trek: The Original Series: Volume 1"

Sort title
"Star Trek: The Original Series: Volume 01"

"Star Trek: The Original Series: Volume 1"
Absolutely correct

"Star Trek: The Original Series: Volume 01"
This is neither correct nor incorrect, since we dontt affect how Invelos sorts the Online database. It is right for YOU

Same would be true if someone asked your question and said
"Star Trek: The Original Series: Volume 001", or whatever, it's your choice.

You're both crazy.

Sort title should be "Star Trek: TOS: V01"

Fewer keystrokes and less likely for Skip to mis-spell!

Come now! Skip misspells professionally! I'm pretty certain he can, and has, misspelled "a".
